Tasty Guacamole

 Hello!

I believe this will be my last post that doesn't have a video. But, we never know :P

I am also thinking about changing the way I make the videos. Until today I have been filming the recipes as if this was a cooking blog/channel, but I'm not sure if that's what people want to see so I will try a different type of video, a different approach and perspective on the matter and then I'll work my way from there :)

Anyway, here's today's recipe: Tasty Guacamole - "You do have chips, right?" Well, I love me some guacamole but I honestly do not eat it with chips but rather with corn tortilla chips :D but I do believe a tasty guacamole goes well with pretty much everything, right? Specially when you love it!

If you ever want to try this recipe, here's what I used:

- 1 large avocado or 2 small ones

- lime juice to taste (I used lemon) + one round slice of lime for garnish

- 1 medium tomato

- coriander to taste

- 1 medium onion 

- 1/2 bell-pepper (red or green, up to you, I just make sure the bell-peppers I buy always have four segments - in this case I used green bell pepper for the guacamole and some small cubes of red bell-pepper for garnish to be faithful to the image :P)

- salt and pepper to taste, and two mint leaves to garnish

Cut the avocado in half, remove the pulp into a bowl and discard peel and stone. Mash the avocado with a fork quite coarsely. Add in lime or lemon juice to taste (add about the juice of half a lime/lemon, taste it and go from there), the coriander chopped finely, the tomato chopped finely, the onion chopped finely and the bell-pepper also chopped finely. Mix it all together, making sure to leave the guacamole with some chunks of avocado, for texture. My avocados were really ripe so my guacamole ended up really smooth after mixing everything together (which is absolutely no problem at all :D). Season with salt and pepper, garnish with the slice of lime/lemon, the mint leaves and the red bell-pepper cubes (in this case). Serve however you want but my advice is with some corn tortilla chips or in a wrap, or even spread on bread or toast! :D Enjoy!

Tasty Guacamole⭐⭐⭐⭐⭐ - I am rating this guacamole with five stars because I love mashed avocado (did I ever tell you?!). I also really really love guacamole because it takes avocado to a whole other level ^_^ Tangy, salty, creamy, tasty and fresh... what else could I ask for? ^_^ Delicious!!!

Chunky Cauliflower Soup

 Hello!

I know this is the middle of the Summer but I have some recipes that I've made a while back, before I started making videos, and they were never published. As I want to make a video for every recipe I cook now, I need to publish these guys so I don't get confused about having recorded the recipe or not.

So, here I bring you this amazing Chunky Cauliflower Soup - Whoever said Cauliflower Soup was boring had never tried this delicious broth. And so I tried my best to create a delicious broth (which in my opinion I succeeded :P) in order to make this cauliflower soup not boring at all :D 

I'm not going to give you the measures of the ingredients because I remember making a huge pot of this soup. But I am going to give you a list of what I used and the steps, just a quick guide.

For this chunky cauliflower soup I used:

- cauliflower florets (bite-size pieces)

- onion

- potatoes

- carrots

- garlic

- chicken stock + water (more stock than water, or even just stock)

- duck fat

- Bay leaves, salt, pepper, cumin powder, mustard powder and nutmeg

I started by sweating the vegetables - except the cauliflower, cut into smaller pieces, in a pot, over low heat, covered with a lid. After about 5 minutes I added the duck fat and all the spices - except the salt, gave it a mix and let it sweat a bit more, still covered. After another 5 minutes I added the stock and the water, enough to cover the vegetables, and I cranked up the heat until it came to a boil. After that I turned the heat to medium low and left it boiling for about 20 minutes, until the toughest vegetable was cooked. I turned off the heat, added a bit more of cold water and pureed it with my hand blender to make it a smooth creme. Checked for salt, added the bite-size pieces of cauliflower and put it on the heat for about 10 more minutes, until the cauliflower was cooked to my taste.

Great for Winter or Autumn days because this soup came out very fragrant with the spices used. I can also say that this soup can be an alternative to the french onion soup. Put it in a heat resistant bowl, grate some good quality cheddar/parmesan/gruyère cheese (or even a mix of the three) on top of it, grill it in the oven and I'll be damned if this will not be a great soup! Pair it with buttered toasts, of course!

Chunky Cauliflower Soup⭐⭐⭐⭐ ⭐ - Wow! Five stars for a soup! Well, yes! I've made a lot of soups in my life - and in Portugal we do have fame for our incredibly rich soups that are actual meals - but I have never made a more fragrant, tasty and delicious soup like this one. When I cooked it it was still a very cold Spring day so it warmed my body and soul so much that I have already repeated this recipe and didn't change a thing :) Show some love to this amazing cauliflower soup and try it yourselves someday ^_^

Sausage and Pepperoni Omelette *with video!

Hello!
For now I won't be considering the segments I have on the blog (Omelette Monday, Fail Friday and Pizza Power) because the frequency with which I make videos is lesser, which means I make fewer posts, and this means I most likely won't be able to match up the foods with the days in questions so... I am sorry. This doesn't mean I won't be posting no more omelettes nor pizzas nor fails, it just means they won't be posted on mondays nor fridays and most certainly not every week (if you noticed I have been posting about one food a week).
Enough babbling! Here I have another omelette to show you :) I chose the Sausage and Pepperoni Omelette - Yum, the eggy flavour of this omelette is enhanced by the meaty sausage and pepperoni.
I didn't taste this omelette but I'm pretty sure it was a good one ;)

Sausage and Pepperoni Omelette⭐⭐⭐⭐ - My boyfriend rated this with four stars because of the same old same old... it's tasty and good but it is just an omelette. Oh well... :P I guess this means it is good, all in all :D
